Ingredients
- 2 1/4 pounds tripe beef
- cold water
- 1 head garlic whole
- 1 blood sausage
- 1 chorizo sausage
- 2/3 cup ham Iberian, you can substitute pancetta
- 1 onion chopped
- 1 tablespoon flour
- 1/2 tablespoon paprika
Method
- Wash the tripe well with very cold water, at least 3 times.
- In a soup pot, add cold water, the whole garlic head, blood sausage, chorizo sausage, ham, onion, and tripe and boil for 3 1/2 hours.
- When everything has softened, add the flour and paprika and boil another 15 minutes.
