- 1/2 head lettuce
- 1 tomato, cut into 8 wedges
- 1/2 peeled cucumber (1/2-inch chunks)
- 10 black olives
- 6 Salonika peppers
- 8 anchovy fillets
- wine vinegar
- 1/2 green pepper, sliced
- 6 small beets, cut in half
- 4 green onions (scallions), sliced
- 6 radishes, sliced
- 1/3 lb. Feta cheese, crumbled
- olive oil
- salt and pepper to taste
Method
- Break lettuce into small pieces and toss with next 8 ingredients.
- Salt and pepper to taste and toss again.
- Place anchovies evenly around salad and sprinkle Feta cheese over top. Just before serving, pour even amounts of olive oil and vinegar over salad and toss at table.
- Serve with hard bread, crackers or crusty rolls.
