Ingredients

  • 1/2 head lettuce
  • 1 tomato, cut into 8 wedges
  • 1/2 peeled cucumber (1/2-inch chunks)
  • 10 black olives
  • 6 Salonika peppers
  • 8 anchovy fillets
  • wine vinegar
  • 1/2 green pepper, sliced
  • 6 small beets, cut in half
  • 4 green onions (scallions), sliced
  • 6 radishes, sliced
  • 1/3 lb. Feta cheese, crumbled
  • olive oil
  • salt and pepper to taste

Method

  • Break lettuce into small pieces and toss with next 8 ingredients.
  • Salt and pepper to taste and toss again.
  • Place anchovies evenly around salad and sprinkle Feta cheese over top. Just before serving, pour even amounts of olive oil and vinegar over salad and toss at table.
  • Serve with hard bread, crackers or crusty rolls.
