Ingredients
- 4 flour or corn tortillas
- 1 onion, cut in wedges
- 1 (14 oz.) can Mexican style tomatoes
- 1 (4 oz.) can whole green chilies, cut into strips
- 1 1/2 c. shredded, cooked chicken
- 2 Tbsp. oil
- 2 tsp. red wine vinegar
Method
- In a large skillet, cook onion in oil until tender and crisp. Drain tomatoes and reserve liquid.
- Add liquid and oregano to skillet and cook over high heat for 3 minutes, stirring frequently.
- Stir in meat and chilies; remove from heat.
- Spoon chicken mixture on each tortilla and roll up.
- Add remaining oil to skillet and lightly brown roll-ups.
- Chop tomatoes and stir in vinegar.
- Pour this over roll-ups.
- Cover and cook over low heat for 3 minutes.
