Ingredients

  • 1 1/2 c. all-purpose flour
  • 3/4 c. grnd flaxseed
  • 3/4 c. oat bran
  • 1 c. brown sugar
  • 2 tsp baking soda
  • 1 tsp baking pwdr
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 1/2 c. finely shredded carrots
  • 2 x peeled & shredded apples
  • 1/2 c. raisins (optional)
  • 1 c. minced nuts
  • 3/4 c. lowfat milk
  • 2 x beaten Large eggs
  • 1 tsp vanilla
  • 2 Tbsp. canola oil

Method

  • Mix together flour, flaxseed, oat bran, brown sugar, baking soda, baking pwdr, salt and cinnamon in a large bowl.
  • Stir in carrots, apples, raisins and nuts.
  • Combine lowfat milk, beaten Large eggs, vanilla and oil.
  • Pour liquid ingredients into dry ingredients.
  • Stir till moistened.
  • Don't over mix.
  • Fill muffin c. 3/4 full.
  • Bake at 350 for 15-20 min.
  • Yields: 15 muffins
