Ingredients

  • 6 cups water
  • 1 (28 ounce) can crushed tomatoes
  • 1 (1 1/4 ounce) package onion soup mix
  • 1 (16 ounce) can black beans, drained and rinsed
  • 1 (16 ounce) can red beans, drained and rinsed
  • 1 (16 ounce) can garbanzo beans, drained and rinsed
  • 1 (10 ounce) package frozen corn
  • 1 (4 ounce) canned diced green chiles
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons canola oil or 2 tablespoons olive oil
  • 1 cup tortilla chips (crushed)
  • chopped green onions or sliced avocados or chopped fresh tomatoes or low-fat sour cream or shredded cheddar cheese or monterey jack cheese

Method

  • Place all ingredients up to the crushed tortilla chips in a large pot and bring to a boil.
  • Add tortilla chips, mix cover, turn off heat, and allow to rest for about 10 minutes, or until chips have dissolved in the soup.
  • Serve with garnishes.
