Ingredients

  • 1 chopped onion
  • 1 (4 oz.) can drained, chopped green chiles
  • 3 cloves minced garlic
  • 2 Tbsp. olive or vegetable oil
  • 1 c. peeled, chopped tomatoes
  • 1 (10 1/2 oz.) can beef consomme
  • 1 (10 1/2 oz.) can chicken broth
  • 2 1/4 c. water
  • 3/4 c. tomato sauce
  • 1 tsp. ground cumin
  • 2 tsp. Worcestershire sauce
  • 1 Tbsp. steak sauce
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 green and 1/2 red pepper, chopped
  • 3 handfuls corn tortilla chips
  • 1/4 c. shredded Monterey Jack cheese

Method

  • Saute onion, chiles, garlic and peppers in oil until soft. Add tomatoes, consomme, broth, water, tomato sauce, chili powder, salt, pepper, Worcestershire and steak sauce.
  • Bring soup to a boil, lower heat to simmer and cook, covered, for 1 hour.
  • Add tortillas and cheese and simmer 10 minutes more.
