Ingredients

  • 2 medium zucchini, sliced lengthwise
  • 2 medium yellow squash, sliced lengthwise
  • 2 medium carrots, sliced lengthwise
  • 2 large tomatoes, sliced lengthwise
  • 1 medium red onion, sliced lengthwise
  • 1 part Herb Oil (see Herb Oil recipe)
  • salt and pepper to taste
  • 6 flour tortillas (10-inch)
  • 1 bunch cilantro, chopped
  • Roasted Jalapeno Mayonnaise (see recipe)

Method

  • Slice all vegetables lengthwise in thin strips.
  • Marinate in Herb Oil (save teaspoon for mayonnaise) for at least two hours. Season with salt and pepper to taste and grill lightly.
  • Warm tortillas; spread with jalapeno mayonnaise.
  • Spread grilled vegetables on tortillas evenly.
  • Roll tortillas tightly; trim ends and cut into 3 equal parts.
  • Garnish with chopped cilantro.
