Ingredients

  • 2 onions, chopped
  • 4 Tbsp. butter
  • 1 can tomatoes
  • 1/2 c. tomato paste
  • 4 cloves garlic
  • 2 ribs celery, chopped
  • 1/4 bell pepper, chopped
  • 1 tsp. chopped parsley
  • 1/2 tsp. chopped parsley
  • 1/2 tsp. thyme
  • 3 cloves, chopped
  • 1 lb. boiled ham, diced
  • 2 lb. cooked shrimp, peeled and deveined
  • 3 c. cooked rice
  • seasonings to taste

Method

  • Saute onions in butter for 5 minutes until clear.
  • Add tomatoes and tomato paste.
  • Cook for 5 minutes, stirring constantly.
  • Add garlic, celery, bell pepper, parsley, thyme and cloves.
  • Cook 30 minutes, stirring frequently.
  • Stir in rice. Season to taste and simmer 30 minutes, stirring often.
