- 2 onions, chopped
- 4 Tbsp. butter
- 1 can tomatoes
- 1/2 c. tomato paste
- 4 cloves garlic
- 2 ribs celery, chopped
- 1/4 bell pepper, chopped
- 1 tsp. chopped parsley
- 1/2 tsp. chopped parsley
- 1/2 tsp. thyme
- 3 cloves, chopped
- 1 lb. boiled ham, diced
- 2 lb. cooked shrimp, peeled and deveined
- 3 c. cooked rice
- seasonings to taste
Method
- Saute onions in butter for 5 minutes until clear.
- Add tomatoes and tomato paste.
- Cook for 5 minutes, stirring constantly.
- Add garlic, celery, bell pepper, parsley, thyme and cloves.
- Cook 30 minutes, stirring frequently.
- Stir in rice. Season to taste and simmer 30 minutes, stirring often.
