Ingredients

  • 4 cups water
  • 2 cups sugar
  • 1 tablespoon lime zest
  • 3 tablespoons lime juice
  • 4 tablespoons cinchona bark powder
  • 2 tablespoons citric acid powder
  • 1 cup chopped lemon grass stalk

Method

  • add water and sugar to instant pot and stir
  • zest and juice lime and add to instant pot and stir
  • add cinchona and citric acid powder to instant pot and stir
  • chop lemon grass, add to instant pot and stir
  • set instant pot to 15 minutes on high and lock lid with slow release pressure
  • start
  • after instant pot cycle is done and pressure is released, strain mixture through a coffee filter
  • G&T: 1 shot tonic syrup, 2 shots gin, 4-5 ice cubes, soda water to top of glass, add wedge of lime, and stir
