Ingredients

  • 6 clove garlic cloves,cut in thin pieces
  • 1 green pepper,cut in julienne strips
  • 1 small onion in strips
  • 1/4 cup red wine vinegar
  • 1/4 tsp thyme
  • 2 tbsp extra Virgin olive oil
  • 2 sliced tomatoes
  • 1 salt to taste

Method

  • In a heavil small skillet, add the olive oil, garlic, green pepper, onion and thyme and cook till wilted
  • Pour the vinegar and when it starting to boil, set aside ,cover and wait for 20 minutes.
  • Salt to taste
  • In a shallow salad plate,arrange the timatoes, pour the escabeche on top and serve.
