Ingredients
- 6 clove garlic cloves,cut in thin pieces
- 1 green pepper,cut in julienne strips
- 1 small onion in strips
- 1/4 cup red wine vinegar
- 1/4 tsp thyme
- 2 tbsp extra Virgin olive oil
- 2 sliced tomatoes
- 1 salt to taste
Method
- In a heavil small skillet, add the olive oil, garlic, green pepper, onion and thyme and cook till wilted
- Pour the vinegar and when it starting to boil, set aside ,cover and wait for 20 minutes.
- Salt to taste
- In a shallow salad plate,arrange the timatoes, pour the escabeche on top and serve.
