Ingredients
- 2 teaspoons olive oil
- 3 cloves garlic minced
- 3 cups vegetable stock
- 3/4 teaspoon salt
- 3 cans diced tomatoes undrained
- 2 cups fresh basil leaves thinly sliced
Method
- Heat Olive Oil in large saucepan over medium heat.
- Add garlic and cook for 1 minute, stirring constantly.
- Add broth, salt and tomatoes.
- Bring to boil, then reduce heat and simmer for 20 minutes.
- Stir in Basil.
- Puree soup in blender.
- Garnish with basil leaves.
