Ingredients

  • 2 teaspoons olive oil
  • 3 cloves garlic minced
  • 3 cups vegetable stock
  • 3/4 teaspoon salt
  • 3 cans diced tomatoes undrained
  • 2 cups fresh basil leaves thinly sliced

Method

  • Heat Olive Oil in large saucepan over medium heat.
  • Add garlic and cook for 1 minute, stirring constantly.
  • Add broth, salt and tomatoes.
  • Bring to boil, then reduce heat and simmer for 20 minutes.
  • Stir in Basil.
  • Puree soup in blender.
  • Garnish with basil leaves.
