Ingredients
- 2 c. cucumber, seeded and chopped
- 1/4 c. chopped red onion
- 2 Tbsp. rice vinegar
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. plain fat-free yogurt
- 3 Tbsp. fresh mint, chopped
Method
- Combine cucumber, onion, vinegar, sugar, salt and pepper. Toss well.
- Add yogurt and fresh mint.
- Stir well to combine. Refrigerate.
