Ingredients

  • 2 Tbsp. butter or margarine
  • 2 onions, chopped
  • 2 carrots, chopped
  • 2 leeks, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. curry powder
  • 1/2 c. flour
  • 2 (6 oz.) cans tomato paste
  • 4 c. chicken broth
  • 3 c. tomato juice
  • 1/2 c. dry white wine
  • salt and pepper
  • 1/2 c. sour cream
  • 2 tomatoes, chopped
  • 1/4 c. snipped fresh chives

Method

  • Melt butter in heavy saucepan.
  • Saute onions, carrots, leeks, garlic and curry powder over medium heat until vegetables are soft, but not brown.
  • Stir
  • in flour and tomato paste. Immediately reduce heat; stir in chicken broth, tomato juice, wine, salt and pepper to taste.
  • Simmer slowly 1 hour.
  • Strain soup if desired.
