Ingredients
- 1 1/2 c. flour
- 3/4 c. sugar
- 1/4 tsp. soda
- 1 c. coconut
- 1 1/2 Tbsp. buttermilk
- 1/2 c. butter
- 1 tsp. vanilla
- 1/2 tsp. baking powder
- 1 egg
Method
- Cream butter and sugar; add egg.
- Beat until fluffy.
- Blend in buttermilk and vanilla.
- Add flour, soda and baking powder.
- Toast coconut in a 200° oven; cool.
- Add to mixture.
- Chill for about 10 minutes.
- Drop by rounded teaspoonfuls on greased cookie sheet and bake at 375° for 10 minutes.
