Ingredients

  • 1/4 cup olive oil, extra virgin
  • 2 tbsp minced garlic
  • 1 tbsp agave nectar
  • 1 can chipotles in adobo sauce
  • 1 can fire roasted tomatoes
  • 1 tsp soy sauce
  • 1/4 cup dry white wine
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • 1 large chopped onion
  • 2 colored bell peppers, chopped
  • 1 lb mushroom, sliced
  • 2 lb shrimp
  • 1/2 bunch cilantro

Method

  • Liquify sauce ingredients in a blender.
  • Bring the sauce to a boil in a small pot and reduce heat.
  • In a large pan bring oil to medium high and add chopped onions.
  • Once onions are soft, add the peppers and mushrooms.
  • After the peppers are 2/3 cooked, add the sauce, shrimp and cilantro.
  • Cook until the shrimp are just done.
