Ingredients

  • 1 16 oz can great northern beans
  • 1 16 oz can black beans
  • 1 16 oz can kidney beans
  • 1 10 oz pkg frozen corn, thawed
  • 1 2 oz jar pimento, drained
  • 1 carrot, finely chopped
  • 1/2 C olive oil
  • 1/2 C cider vinegar
  • 1 clove garlic, minced
  • 1/2 t salt
  • 1/2 t pepper
  • 1/2 t chili powder
  • fresh chopped parsley

Method

  • Drain and rinse beans
  • Combine veggies in lg bowl.
  • Combine dressing and pour over veggies
  • Refridgerate up to 4 days
  • Can also puree as a dip or spread.
