Ingredients

  • 1 1/2 pounds dried apricot
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 tablespoon corn starch
  • 1/2 cup tap water

Method

  • Place apricots in large pot covered with water and cook on medium until mushy.
  • Be sure to keep enough water on apricots to keep them from sticking to bottom but not too wet.
  • Apricots will expand when cooked.
  • Next take cornstarch and hot water and shake in a jar until dissolved.
  • Add to apricots and stir.
  • Then add other ingredients and stir, let stand while you make pie crust.
