Ingredients
- 1 1/2 pounds dried apricot
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon butter
- 1 tablespoon corn starch
- 1/2 cup tap water
Method
- Place apricots in large pot covered with water and cook on medium until mushy.
- Be sure to keep enough water on apricots to keep them from sticking to bottom but not too wet.
- Apricots will expand when cooked.
- Next take cornstarch and hot water and shake in a jar until dissolved.
- Add to apricots and stir.
- Then add other ingredients and stir, let stand while you make pie crust.
