Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion , diced
  • 2 garlic, cloves sliced
  • 1 tablespoon ginger, minced
  • 1 tablespoon red thai chili paste
  • 1 sweet potato,, diced
  • 2 carrots, peeled and diced
  • 3 cups Vegetable stock
  • 3/4 cup red lentils
  • 1 tablespoon Soy sauce
  • 1 tablespoon lime juice
  • 1 can coconut milk

Method

  • Cook onions for 5 minutes, add garlic, carrots and ginger.
  • Add red curry paste and a little stock, blend and cook for 1 minute.
  • Add sweet potatoes, stock, lentils, soy sauce and lime juice. cover and bring to a boil, reduce heat and simmer for 20 minutes.
  • Add coconut milk and serve warm.
