- 1 tablespoon olive oil
- 1 cup onion , diced
- 2 garlic, cloves sliced
- 1 tablespoon ginger, minced
- 1 tablespoon red thai chili paste
- 1 sweet potato,, diced
- 2 carrots, peeled and diced
- 3 cups Vegetable stock
- 3/4 cup red lentils
- 1 tablespoon Soy sauce
- 1 tablespoon lime juice
- 1 can coconut milk
Method
- Cook onions for 5 minutes, add garlic, carrots and ginger.
- Add red curry paste and a little stock, blend and cook for 1 minute.
- Add sweet potatoes, stock, lentils, soy sauce and lime juice. cover and bring to a boil, reduce heat and simmer for 20 minutes.
- Add coconut milk and serve warm.
