Ingredients

  • 12 oz well trimmed skirt steak
  • Dressing:
  • 1/4 cup fresh lime juice
  • 2 T vegetable oil
  • 2 t sugar
  • 1 1/2 t minced jalapeno pepper
  • 1/4 t salt
  • 1/4 t minced garlic
  • Salad:
  • 4 cups bean sprouts
  • 1 1/2 cups thinly sliced cucumber
  • 1/4 cup chopped fresh mint leaves
  • 8 cups torn lettuce
  • Chopped peanuts for topping

Method

  • Grill or broil steak on oiled grill or broiler rack for 5-7 minutes, turning once for
  • medium rare. Let stand 5 minutes, then slice thinly against the grain.
  • Whisk dressing in large bowl until blended. Add steak and remaining ingredients
  • except the lettuce. Toss to mix. Line serving platter with lettuce; mound beef
  • salad on top. Sprinkle with peanuts.
