Ingredients
- 1 tbsp. canola oil
- 1 1/4 lb. ground turkey
- 2 c. roasted tomato chipotle salsa with corn
- 8 taco shells
- 1/2 c. shredded jalapeno Jack or cheddar cheese
- 1 c. shredded iceberg lettuce
- 1/2 c. guacamole
Method
- In a large skillet, heat 1 tablespoon canola oil over medium heat.
- Add turkey and cook, breaking it up with the back of a spoon, until no longer pink, 6 to 7 minutes.
- Stir in salsa and cook until salsa is heated, about 3 minutes.
- Spoon turkey mixture into taco shells.
- Top with cheese and lettuce and serve with guacamole.
