Ingredients

  • 1 tbsp. canola oil
  • 1 1/4 lb. ground turkey
  • 2 c. roasted tomato chipotle salsa with corn
  • 8 taco shells
  • 1/2 c. shredded jalapeno Jack or cheddar cheese
  • 1 c. shredded iceberg lettuce
  • 1/2 c. guacamole

Method

  • In a large skillet, heat 1 tablespoon canola oil over medium heat.
  • Add turkey and cook, breaking it up with the back of a spoon, until no longer pink, 6 to 7 minutes.
  • Stir in salsa and cook until salsa is heated, about 3 minutes.
  • Spoon turkey mixture into taco shells.
  • Top with cheese and lettuce and serve with guacamole.
