Ingredients

  • 3 lb. boneless stew beef, cut into 1/2-inch cubes or 3 lb. lean ground beef
  • 1 1/2 c. chopped onion
  • 1 c. chopped green bell pepper
  • 3 gloves garlic, chopped
  • 2 tsp. oregano leaves
  • 2 tsp. sugar
  • 2 (28 oz.) cans whole tomatoes (undrained), broken up
  • 2 c. water
  • 1 (6 oz.) can tomato paste
  • 8 tsp. beef flavor instant bouillon or 8 beef flavor bouillon cubes
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin

Method

  • In large kettle or Dutch oven, brown meat (if using beef, pour off fat).
  • Add onion, pepper and garlic; cook and stir until tender.
  • Add remaining ingredients.
  • Cover; bring to a boil. Reduce heat; simmer 1 1/2 hours (1 hour for ground beef) or until meat is tender, stirring occasionally.
  • Serve with corn chips and sweet pepper salsa.
