Ingredients

  • 3 lbs chicken wings
  • Marinade
  • 1 12 oz can of beer
  • 1/4 cup cider vinegar
  • 2 tbsps chili powder
  • 2 tbsps packed brown sugar
  • 2 tbsps molasses
  • 2 tbsps ketchup or chili sauce
  • 1 tbsp Dijon
  • 1 tsp veg oil
  • 1 garlic clove minced
  • 1/2 tsp salt
  • Pico:
  • 1 1/2 cups black beans
  • 2 plum tomatoes diced
  • 1 diced small onion
  • 1 minced garlic clove
  • 1 tbsp minced fresh cilantro
  • 1 tsp cider vinegar
  • 1 tsp veg oil
  • salt

Method

  • 1. Mix marinade ingredients. Marinate chicken in plastic bag for several hours or overnight.
  • 2. Grill chicken. Brush with warm leftover marinade.
  • 3. Mix pico de gallo and serve with wings.
