Ingredients

  • 1 can black beans, drained and rinsed
  • 1 packet Sazon seasoning
  • 8 oz M Jack cheese, shredded
  • 1 c salsa
  • 1 c halved cherry tomatoes
  • 1 lb grilled chicken breasts, cubed
  • 8 oz cheddar, shredded 5-6 strips pepper bacon, diced
  • 1 avocado, cubed
  • 1 head romaine, cut in strips
  • 1 pkg tortilla salad strips
  • CREAMY LIME DRESSING:
  • 2 T chopped cilantro
  • 1 T red wine vinegar
  • 1 t lime zest
  • 1/2 c sour cream
  • 1 garlic clove, smashed
  • 1 T honey
  • 1/2 c olive oil
  • s&p
  • Blend all ingredients.

Method

  • Mix beans with Sazon; season with s&p
  • Toss salsa with tomatoes
  • Toss lettuce with 3/4 c dressing
  • In clear trifle dish, layer the salad, beginning with black beans, followed by M Jack cheese, chicken, tomato salsa mixture, Cheddar, bacon, avocado, lettuce. Top with tortilla strips. Serve remaining dressing on the side.
