- 1 onion, chopped
- 1 clove garlic, minced
- 1 green pepper, chopped
- 1/2 c. mushrooms, sliced
- 4 c. tomato sauce
- 1 Tbsp. chili powder
- 1 1/2 c. pinto beans, cooked
- 1/2 c. yogurt
- 1 c. cottage cheese
- 8 corn tortillas
- 1/2 c. Mozzarella cheese, grated
Method
- Preheat oven to 350°.
- Saute onion, garlic, pepper and mushrooms until onion is transparent.
- Add tomato sauce, chili powder and beans.
- Heat through.
- Stir yogurt and cottage cheese together.
