Ingredients

  • Broccoli
  • Sharp white Cheddar for the yellow Cheddar
  • More EVOO
  • 1 pound ground sirloin
  • 1 red or yellow bell pepper, cored, seeded, and cut into thin strips

Method

  • Preheat a medium nonstick skillet over medium-high heat.
  • Add a drizzle of EVOO and the beef.
  • Brown the meat, breaking it up with a wooden spoon.
  • Add the peppers and cook together for 5 minutes, seasoning with salt and pepper to taste.
  • Prepare the Mac-n-Cheddar, without the broccoli, as in the master recipe, #4.
  • Fold in the beef and bell peppers after combining the cheese sauce with the cooked pasta.
