Ingredients

  • 2 tsp olive oil
  • 1 lb chicken breasts
  • dash pepper
  • 1/2 cup sake
  • 1/4 cup mirin
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1/2 tsp ground ginger
  • 3 tsp corn starch
  • 1 tbsp water

Method

  • Preheat oil in large saute pan over medium high heat.
  • Cut chicken into small pieces and season with pepper.
  • Cook in hot pan until golden on all sides.
  • Whisk together sake, mirin, soy sauce, brown sugar, and ginger.
  • Add sauce to pan, bring to a boil, reduce heat to medium and simmer.
  • Mix together corn starch and water until smooth.
  • Add to pan and simmer until thickened and chicken is cooked through.
