Ingredients

  • 2 or 3 boneless, skinless chicken breasts
  • 1/2 c. teriyaki sauce
  • 3 bell peppers, chopped
  • 1 c. chopped onion
  • 2 Tbsp. cornstarch

Method

  • Cut chicken into 1-inch pieces.
  • Coat skillet with cooking spray.
  • Add chicken pieces and cook thoroughly.
  • Add teriyaki sauce, onions, and peppers.
  • Cover and cook on low-medium 5-10 minutes.
  • Mix cornstarch with a little water, and stir thoroughly. Add to chicken in skillet, and simmer on medium 10 minutes, or until sauce is thickened.
  • Serve over cooked white rice.
