Ingredients

  • 1 lb. ground beef
  • 3/4 c. chopped onion
  • 1 (16 oz.) can tomatoes, cut up and drained
  • 1 (15 oz.) can kidney beans (undrained)
  • 1/2 c. uncooked rice
  • 1/2 c. water
  • 3 Tbsp. chopped green pepper
  • 1 1/2 tsp. chili powder
  • 1/2 tsp. garlic salt
  • 3/4 c. shredded cheese
  • corn chips

Method

  • In a skillet, fry ground beef and onions.
  • Drain.
  • Stir in remaining ingredients except cheese and corn chips.
  • Bring to a boil; reduce heat, cover and simmer for 20 minutes, stirring occasionally.
  • Serve over corn chips, then top with cheese.
