- 1 lb. ground beef
- 3/4 c. chopped onion
- 1 (16 oz.) can tomatoes, cut up and drained
- 1 (15 oz.) can kidney beans (undrained)
- 1/2 c. uncooked rice
- 1/2 c. water
- 3 Tbsp. chopped green pepper
- 1 1/2 tsp. chili powder
- 1/2 tsp. garlic salt
- 3/4 c. shredded cheese
- corn chips
Method
- In a skillet, fry ground beef and onions.
- Drain.
- Stir in remaining ingredients except cheese and corn chips.
- Bring to a boil; reduce heat, cover and simmer for 20 minutes, stirring occasionally.
- Serve over corn chips, then top with cheese.
