Ingredients

  • 14 oz pasta (rigatoni or similar)
  • 4 oz bacon, diced
  • 1/2 lb mushrooms, halved
  • 1/3 lb cherry tomatoes, halved
  • 1 cup vegetable stock
  • 3 1/2 oz low-fat cream cheese
  • 8 stalks thyme

Method

  • Cook the pasta in boiling salted water according to the package instructions, then drain.
  • Cook the bacon in a frying pan over medium heat for 1-2 mins. Add the mushrooms and cook for another 4-5 mins. Add the cherry tomatoes, and cook 1 min longer. Remove the vegetables and bacon from the pan, then add the stock. Stir in the cream cheese and half of the thyme and season to taste. Simmer the sauce for 2 mins. Return the vegetables and bacon to the sauce, and pour it over the pasta. Serve sprinkled with the remaining thyme.
