- 2 cups flour
- 1 teaspoon baking soda
- 12 teaspoon baking powder
- 12 teaspoon salt
- 1 cup butter, softened
- 34 cup packed brown sugar
- 34 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 2 cups quick-cooking oats
- 2 cups corn flakes
- 1 cup coconut
- 12 cup chopped walnuts or 12 cup pecans
Method
- Preheat oven to 375 degrees.
- In a small bowl, combine flour, baking powder, baking soda and salt; stir to mix and set aside.
- In large bowl beat butter and add both sugars; beat until fluffy.
- Beat in eggs and vanilla and add flour mixture; mixing until well combined.
- Stir in oats, cornflakes, coconut and nuts.
- Roll Dough into one inch balls and place on cookie sheet lined with parchment paper; flatten slightly.
- Bake 8-10 minutes.
