Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 12 teaspoon baking powder
  • 12 teaspoon salt
  • 1 cup butter, softened
  • 34 cup packed brown sugar
  • 34 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups quick-cooking oats
  • 2 cups corn flakes
  • 1 cup coconut
  • 12 cup chopped walnuts or 12 cup pecans

Method

  • Preheat oven to 375 degrees.
  • In a small bowl, combine flour, baking powder, baking soda and salt; stir to mix and set aside.
  • In large bowl beat butter and add both sugars; beat until fluffy.
  • Beat in eggs and vanilla and add flour mixture; mixing until well combined.
  • Stir in oats, cornflakes, coconut and nuts.
  • Roll Dough into one inch balls and place on cookie sheet lined with parchment paper; flatten slightly.
  • Bake 8-10 minutes.
