Ingredients
- 1 1/4 cups sugar
- 4 tablespoons flour
- 1 cup light corn syrup
- 1 1/4 cups coconut
- 1 (8 ounce) can crushed pineapple, undrained
- 3 eggs, beaten
- 1 teaspoon vanilla
- 1 unbaked pie shell (9-10 inch)
- whipped fresh cream, optional
Method
- Mix sugar and flour; add next 5 ingredients.
- Mix well and pour into pie shell.
- Bake at 350* for 55-60 minutes, until knife comes out clean.
- Cool.
- Chill.
- Serve with whipped cream.
