Ingredients

  • 8 carrots, sliced
  • 1/2 c. mayonnaise
  • 1 Tbsp. minced onion
  • 1 Tbsp. horseradish
  • 1/2 tsp. salt
  • 1/2 c. fine cracker crumbs
  • dash of paprika
  • 1/4 c. chopped parsley

Method

  • Cook carrots until just tender.
  • Drain, saving 1/4 cup of cooking liquid.
  • Place carrots in greased ovenproof serving dish. In small bowl, combine reserved liquid with mayonnaise, onion, horseradish and salt.
  • Spread over carrots.
  • Sprinkle with cracker crumbs, paprika and parsley.
  • Bake at 375° uncovered for 15 to 20 minutes.
