Ingredients

  • 1 1/2 lb. lean ground beef
  • 1 small onion, chopped
  • 1 (16 oz.) can whole kernel corn, drained
  • 1 can pitted, drained black olives
  • 1 large can tomatoes
  • 1 to 1 1/2 c. grated Cheddar cheese
  • 1 green pepper, diced
  • garlic salt
  • 1 Tbsp. chili powder
  • 2 c. cornmeal mush

Method

  • Brown ground beef, add onion and green pepper and continue cooking until onion is soft.
  • Drain excess fat.
  • Put canned tomatoes in blender and "chop" briefly.
  • Add to meat mixture, along with corn, olives and garlic salt to taste, chili powder and cheese.
  • Heat through.
  • Line bottom of ungreased casserole with one-half of cooked mush.
  • Add meat mixture and top with remaining mush.
  • Bake, uncovered, for 1 hour at 350°.
