- 1 1/2 lb. lean ground beef
- 1 small onion, chopped
- 1 (16 oz.) can whole kernel corn, drained
- 1 can pitted, drained black olives
- 1 large can tomatoes
- 1 to 1 1/2 c. grated Cheddar cheese
- 1 green pepper, diced
- garlic salt
- 1 Tbsp. chili powder
- 2 c. cornmeal mush
Method
- Brown ground beef, add onion and green pepper and continue cooking until onion is soft.
- Drain excess fat.
- Put canned tomatoes in blender and "chop" briefly.
- Add to meat mixture, along with corn, olives and garlic salt to taste, chili powder and cheese.
- Heat through.
- Line bottom of ungreased casserole with one-half of cooked mush.
- Add meat mixture and top with remaining mush.
- Bake, uncovered, for 1 hour at 350°.
