Ingredients

  • 1 lb. ground beef
  • 1/4 cup chopped onion
  • 2 cups fresh corn
  • 1 can (1 lb.) tomatoes, chopped, with juice
  • 1 can (15-1/2 oz.) kidney beans, rinsed and drained
  • 1 can (8 oz.) tomato sauce
  • 1 env. taco seasoning
  • Corn chips (optional)
  • Shredded cheddar cheese (optional)
  • Sour cream (optional)

Method

  • In a large saucepan, brown ground beef and onion.
  • Drain.
  • Add corn, tomatoes, kidney beans, tomato sauce and taco seasoning.
  • Cover and simmer for 15 minutes, stirring occasionally.
  • Serve with corn chips, cheese and sour cream if desired.
