Ingredients

  • 1 lb ground turkey
  • 1/2 c chopped yellow onion
  • 1 package of taco seasoning
  • 3 10 1/4 oz cans mexican style diced tomatoes
  • 1 14 oz can tomato sauce
  • 2 14 oz pinto beans
  • 1 14 oz can black beans
  • 2 cups water
  • 1 8 oz package of frozen corn

Method

  • Brown the turkey in a dutch oven with chopped onion over medium-high heat, stirring frequently
  • Add taco seasoning, stirring constantly
  • Add cans of diced tomatoes, tomato sauce, beans and water and stir well until hot.
  • Stir corn into soup until it is warmed through.
  • Serve soup warm with preferred toppings like tortilla chips, sour cream, cheddar cheese, avocado, salsa or hot sauce.
