Ingredients

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1/2 tsp. garlic powder
  • 1 envelope taco seasoning mix
  • 1 can (8 oz.) tomato sauce
  • 1 C. light sour cream
  • 1 C. light cottage cheese
  • 2 C. crushed tortilla chips
  • 2 C. (8 oz.) shredded cheddar or Monterey Jack cheese

Method

  • Preheat oven to 350 degrees.
  • Coat 2 1/2 quart casserole dish with nonstick cooking spray.
  • In large skillet, brown ground beef. Remove from heat.
  • Drain any excess liquid.
  • Add onion, garlic powder, taco seasoning and tomato sauce.
  • Mix well.
  • In medium bowl, combine sour cream and cottage cheese.
  • Place half the crushed chips in bottom of prepared casserole dish.
  • Add enough meat mixture to cover chips, then cover meat with half the sour cream mixture and sprinkle with half the shredded cheese.
  • Repeat layers.
  • Bake in preheated oven 30 to 35 minutes until cheese melts and casserole is heated through.
