Ingredients
- 1 lb. ground beef
- 1 small onion, chopped
- 1/2 tsp. garlic powder
- 1 envelope taco seasoning mix
- 1 can (8 oz.) tomato sauce
- 1 C. light sour cream
- 1 C. light cottage cheese
- 2 C. crushed tortilla chips
- 2 C. (8 oz.) shredded cheddar or Monterey Jack cheese
Method
- Preheat oven to 350 degrees.
- Coat 2 1/2 quart casserole dish with nonstick cooking spray.
- In large skillet, brown ground beef. Remove from heat.
- Drain any excess liquid.
- Add onion, garlic powder, taco seasoning and tomato sauce.
- Mix well.
- In medium bowl, combine sour cream and cottage cheese.
- Place half the crushed chips in bottom of prepared casserole dish.
- Add enough meat mixture to cover chips, then cover meat with half the sour cream mixture and sprinkle with half the shredded cheese.
- Repeat layers.
- Bake in preheated oven 30 to 35 minutes until cheese melts and casserole is heated through.
