Ingredients
- 2 to 3 lb. round steak, cut in 1 1/2-inch pieces
- 2 tsp. salt
- 1/2 c. flour
- 3 Tbsp. fat
- 1 onion, sliced
- 1 small green pepper, sliced
- 1 c. water or 1 c. strained tomatoes
Method
- Combine salt with flour.
- Pound flour into both sides of steak with the edge of a heavy saucer or a meat mallet.
- Place fat in the pan; melt over medium heat and add steak.
- Brown well on both sides; add onion, green pepper and boiling water or strained tomatoes.
- Cover and reduce heat to low for 1 hour or until meat is tender.
- Remove to preheated platter; pour juices over meat and garnish with parsley.
- Serves 4 to 6.
