Ingredients

  • 2 to 3 lb. round steak, cut in 1 1/2-inch pieces
  • 2 tsp. salt
  • 1/2 c. flour
  • 3 Tbsp. fat
  • 1 onion, sliced
  • 1 small green pepper, sliced
  • 1 c. water or 1 c. strained tomatoes

Method

  • Combine salt with flour.
  • Pound flour into both sides of steak with the edge of a heavy saucer or a meat mallet.
  • Place fat in the pan; melt over medium heat and add steak.
  • Brown well on both sides; add onion, green pepper and boiling water or strained tomatoes.
  • Cover and reduce heat to low for 1 hour or until meat is tender.
  • Remove to preheated platter; pour juices over meat and garnish with parsley.
  • Serves 4 to 6.
