Ingredients
- 8 medium sweet potatoes
- 1 (8 oz.) can crushed pineapple, drained
- 2 tsp. salt
- 1/2 lb. softened butter
- 1/2 tsp. white pepper
Method
- Use one medium sweet potato per person.
- If necessary, split one large potato in half lengthwise for two people after baking. Bake at 375° until done (time depends on size of potato).
- When done, remove layer of skin from top of potatoes.
- Scoop out pulp and combine with crushed pineapple, salt, butter and white pepper. Reheat in the oven for 20 to 30 minutes or until heated through.
