Ingredients

  • 8 medium sweet potatoes
  • 1 (8 oz.) can crushed pineapple, drained
  • 2 tsp. salt
  • 1/2 lb. softened butter
  • 1/2 tsp. white pepper

Method

  • Use one medium sweet potato per person.
  • If necessary, split one large potato in half lengthwise for two people after baking. Bake at 375° until done (time depends on size of potato).
  • When done, remove layer of skin from top of potatoes.
  • Scoop out pulp and combine with crushed pineapple, salt, butter and white pepper. Reheat in the oven for 20 to 30 minutes or until heated through.
