Ingredients
- 2 tablespoons coconut oil
- 1 medium white onion, diced
- 8 bacon strips, chopped
- 6 celery stalks, diced
- 5 cups peeled and cubed sweet potatoes
- 14 oz coconut milk
- 2 cups chicken broth
- 1 bay leaf
- 1.5 lbs. shrimp, deveined with shells and tail removed
Method
- Sautee onion in coconut oil. Add bacon, cook it. Add celery and sweet potatoes, cook for 4-5 minutes. Add coconut milk, broth, pepper and simmer. Add bay leaf and simmer for 20 minutes. Mash potatoes in pot. Add shrimp. Serve when cooked through.
