Ingredients

  • 2 tablespoons coconut oil
  • 1 medium white onion, diced
  • 8 bacon strips, chopped
  • 6 celery stalks, diced
  • 5 cups peeled and cubed sweet potatoes
  • 14 oz coconut milk
  • 2 cups chicken broth
  • 1 bay leaf
  • 1.5 lbs. shrimp, deveined with shells and tail removed

Method

  • Sautee onion in coconut oil. Add bacon, cook it. Add celery and sweet potatoes, cook for 4-5 minutes. Add coconut milk, broth, pepper and simmer. Add bay leaf and simmer for 20 minutes. Mash potatoes in pot. Add shrimp. Serve when cooked through.
