Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 3/4 inch pieces
  • 2 sweet onions, peeled and cut into 1/2 inch wedges
  • 2 mangoes, peeled and cut into 3/4 inch pieces
  • 1/4 cup olive oil
  • 2 tsp fresh lime juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • pinch cayenne

Method

  • In a large bowl, combine the potatoes, onions, mangoes and pepper. Add the rest of the ingredients and toss to coat.
  • Place in a 13x9 inch greased pan
  • Bake at 450 for 45 minutes covered. Uncover and roast 10-15 minutes more until caramelized.
