Ingredients

  • pecan or walnut halves
  • 3 lb. sweet potatoes
  • 3 eggs
  • 2 Tbsp. melted butter or margarine
  • 1 c. milk
  • 1 tsp. salt
  • 1/4 c. brown sugar (more if desired)

Method

  • Boil and mash sweet potatoes.
  • Blend in well beaten egg yolks, melted butter, salt and milk. Fold in well beaten egg whites. Butter a ring mold or Bundt pan. Place nut halves around in bottom of pan and sprinkle with brown sugar.
  • Cover with sweet potato mixture.
  • Bake at 350° for 45 minutes.
  • Turn upside-down in large plate. Let stand 5 minutes, then remove pan.
  • Fill ring with buttered green peas or green limas.
