Ingredients

  • 1 (30 oz.) can sweet potatoes
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 Tbsp. orange juice
  • 4 Tbsp. butter
  • 1/8 tsp. baking powder
  • 2 large eggs, well beaten
  • 1 tsp. vanilla extract
  • 1 bag marshmallows

Method

  • Drain potatoes and reserve liquid.
  • Beat potatoes with an electric mixer.
  • Add spices, orange juice, butter, 1/4 cup reserved liquid, baking powder, beaten eggs and vanilla.
  • Mix well.
  • Add half the potato mixture to a buttered 1 1/2-quart casserole dish.
  • Add a layer of marshmallows; then the remaining potato mixture.
  • Bake at 350° for 30 minutes.
  • Add a layer of marshmallows and return to the oven until they turn a golden brown.
  • Makes 6 to 8 servings.
