Ingredients

  • 1 c. oil
  • 3 c. white sugar
  • 4 eggs
  • 2/3 c. buttermilk
  • 2 c. pumpkin
  • 3 1/2 c. flour
  • 1 1/2 tsp. soda
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 c. chopped nuts

Method

  • Cream oil, sugar, eggs, buttermilk and pumpkin together.
  • Beat flour, soda, baking powder, salt, cinnamon and nutmeg together. Add with creamed mixture and beat until smooth.
  • Add 1 cup chopped nuts.
  • Bake at 350° for 1 hour in 3 (5 x 8-inch) bread pans or 17 mini loaf pans for 30 minutes.
  • Freezes well.
