Ingredients

  • 2 c. sifted flour
  • 1 tsp. salt
  • 1 c. cooked mashed sweet potatoes
  • 4 tsp. baking powder
  • 2/3 c. shortening
  • 3 Tbsp. milk

Method

  • Sift together dry ingredients.
  • Cut in shortening.
  • Blend in sweet potatoes.
  • Add enough milk to make a soft dough (this will depend on moisture in potatoes).
  • Knead lightly.
  • Roll 3/4-inch thick on lightly floured board.
  • Cut with floured 2-inch cutters. Bake in hot oven (400°) on ungreased baking sheet for 20 minutes or until brown.
  • Makes about 15 biscuits.
