Ingredients
- 8 medium-size yams or sweet potatoes
- 4 Tbsp. butter or margarine
- 3/4 c. brown sugar (1/2 c. in yams; reserve 1/4 c. for glaze)
- 1/2 c. cream or half and half
- 1/2 c. crushed walnuts
Method
- Scrub and boil whole yams or sweet potatoes for 30 minutes. Drain and cool 30 minutes.
- Cut yams in half lengthwise and scoop out meat.
- In a large mixing bowl, whip yams with butter or margarine, 1/2 cup brown sugar, and cream or half and half.
- Pour into greased casserole dish.
- Sprinkle with walnuts and remaining brown sugar.
- Bake, uncovered, at 350° for 30 minutes or on High in microwave for 20 minutes.
