Ingredients

  • 8 medium-size yams or sweet potatoes
  • 4 Tbsp. butter or margarine
  • 3/4 c. brown sugar (1/2 c. in yams; reserve 1/4 c. for glaze)
  • 1/2 c. cream or half and half
  • 1/2 c. crushed walnuts

Method

  • Scrub and boil whole yams or sweet potatoes for 30 minutes. Drain and cool 30 minutes.
  • Cut yams in half lengthwise and scoop out meat.
  • In a large mixing bowl, whip yams with butter or margarine, 1/2 cup brown sugar, and cream or half and half.
  • Pour into greased casserole dish.
  • Sprinkle with walnuts and remaining brown sugar.
  • Bake, uncovered, at 350° for 30 minutes or on High in microwave for 20 minutes.
