- 2 qt. chopped cucumbers (4 large)
- 4 c. bell peppers, chopped
- 1 c. onions, chopped
- 1 Tbsp. turmeric
- 1/2 c. salt
- 2 qt. water
- 1 Tbsp. mustard seed
- 1 tsp. whole cloves
- 2 tsp. whole allspice
- 2 sticks cinnamon
- 1 1/2 c. brown sugar
- 1 qt. vinegar
Method
- Combine cucumbers, peppers and onion.
- Sprinkle with turmeric. Dissolve salt in water.
- Pour salt water over vegetable mixture. Let stand for 3 hours.
- Drain.
- Cover with cold water 1 hour. Drain thoroughly.
