Ingredients
- 1 lb red chilies, deseeded
- 8 cloves peeled garlic
- 2 cups rice vinegar
- 2 1/4 cups sugar
- 1/4 cup fish sauce
Method
- In a food processor, combine chilies and garlic and process until smooth. Combine with 2 cups water, rice vinegar, sugar and fish sauce and simmer for 20-25 mins, stirring occasionally, until thickened and slightly jammy.
