Ingredients

  • 1 qt. dried pea beans
  • 1 medium onion, peeled
  • 1/2 lb. salt pork
  • 1/8 c. molasses
  • 1 Tbsp. salt
  • 1 tsp. dry mustard
  • 1/2 c. brown sugar

Method

  • On Friday night, put the beans to soak in a kettle full of cold water.
  • In the morning, pour the water off, cover with fresh water and bring to a boil.
  • Simmer until you can blow the skins off.
  • To do this take a spoonful of the beans from the pot.
  • (If you should get your face down in the steam you might get badly burned.)
