Ingredients

  • 6 to 8 large potatoes, sliced
  • 1 c. sour cream
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chopped chives
  • 1/4 c. margarine
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1 c. shredded Cheddar cheese or your favorite cheese

Method

  • Preheat oven to 400°.
  • In large bowl, combine all ingredients except cheese. Pour into Pam-sprayed 2-quart casserole dish. Bake, uncovered, at 400° for 15 minutes. Top with cheese and bake 5 minutes longer. Serves 6 to 8.
