Ingredients
- 6 to 8 large potatoes, sliced
- 1 c. sour cream
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. chopped chives
- 1/4 c. margarine
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 1 c. shredded Cheddar cheese or your favorite cheese
Method
- Preheat oven to 400°.
- In large bowl, combine all ingredients except cheese. Pour into Pam-sprayed 2-quart casserole dish. Bake, uncovered, at 400° for 15 minutes. Top with cheese and bake 5 minutes longer. Serves 6 to 8.
