Ingredients

  • 4 chicken breasts small, trimmed
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon wholegrain mustard
  • 1 tablespoon chopped fresh cilantro
  • 1 spring onion sliced
  • 2 cloves garlic crushed
  • 1 red chili small, finely chopped
  • rice
  • bok choy

Method

  • Preheat oven to 350°F. Line a baking sheet with parchment.
  • Arrange chicken on prepared sheet. Combine remaining ingredients in a bowl. Brush half over chicken.
  • Bake chicken for 10 mins. Turn and brush with remaining sauce mixture. Bake for 10 mins. Serve with rice and bok choy.
